סימן צח סעיף ב

אֵין עוֹשִׂין גְּבִינָה בְּיוֹם טוֹב, וְאֵין עוֹשִׂין חֶמְאָה בְּיוֹם טוֹב. וְכֵן אֵין מַעֲמִידִין חָלָב עַל יְדֵי קֵבָה אוֹ שְׁאָר דְּבָרִים, שֶׁיִּתְקַבֵּץ הֶחָלָב וְיִקָּפֶה. וְכֵן אָסוּר לִקְלוֹט שֻׁמַּן הֶחָלָב (סמעטען) מִן הֶחָלָב, אֶלָּא שֶׁיַּנִּיחַ מְעַט עַל הֶחָלָב הַתַּחְתּוֹן, כְּמוֹ בְּשַׁבָּת. וְגַם זֶה, אֵינוֹ מֻתָּר אֶלָּא מַה שֶּׁהוּא צָרִיךְ לְבוֹ בַיּוֹם. אֲבָל לְצֹרֶךְ מָחָר, אָסוּר, מִשּׁוּם הֲכָנָה. וְאִם חוֹשֵׁשׁ לְהֶפְסֵד, מֻתָּר לִקְלוֹט בָּעִנְיָן הַנִּזְכָּר עַל יְדֵי אֵינוֹ יְהוּדִי (תק"י).

You may not make cheese on Yom Tov, neither may you make butter on Yom Tov. Likewise, you may not curdle milk, by putting it in a stomach or by putting a substance into it to cause the milk to thicken and coagulate. Also,¹⁶Magein Avraham 510:13, Mishnah Berurah 510:23. you may not skim off the cream from the milk, unless you leave a little on the milk, the same way it must be done on Shabbos. This, too, is permitted only for as much as you need for that day, but not for the following day, because it amounts to preparing [on Yom Tov for a weekday, which is forbidden]. But if you fear that it will spoil, you may have it skimmed off in the aforementioned manner by a non-Jew.
